Today we’re bringing you a new cookie recipe with a unique flavor profile.

The mystery ingredient in this recipe comes from Japan: white miso, a fermented soybean paste that adds a subtle umami flavor—both sweet and salty—that pairs perfectly with dark chocolate and sesame seeds.

These cookies are half-crunchy, half-chewy, and perfect for sharing at the office during a coffee break!

Ingredients

  • 100g Kaoka 72% Ecuador dark chocolate (bulk)
  • 50g olive oil
  • 30g sesame paste (tahini)
  • 25g white miso
  • 1 egg
  • 100g brown sugar
  • 185g flour
  • 1/2 tsp baking soda
  • A handful of sesame seeds

Tip

You can also try this recipe with other types of miso (brown, red).

Preparation

  1. Preheat the oven to 180°C.
  2. In a bowl, mix the olive oil, sesame paste, and white miso. Add the egg and sugar, then stir again.
  3. Add the dry ingredients: flour and baking soda, then finish with the chocolate.
  4. Form 8 dough balls and roll them in the sesame seeds.
  5. Bake for 12 min at 180°C.
  6. Take the cookies out of the oven and let them cool and firm up before enjoying :)
