Crêpes are life. At Kaoka, we never miss an opportunity to make them. Of course, there’s Candlemas, but between us, we could eat them every week if we listened to some members of the team!
This cocoa version is somewhat of a signature dish for us: we add cocoa powder directly to the batter to create ultra-fluffy crepes with a delicious chocolate flavour. They can be eaten plain or with a delicious topping (we won’t judge you if you add even more chocolate…).
A recipe to keep handy for Candlemas, rainy Sundays, impromptu afternoon teas or weekend brunches.

Preparation
In a large bowl, mix the whole eggs and sugar.
Add the flour and cocoa powder. Mix well.
Add the milk gradually. Mix well.
Leave to rest for at least 1 hour.
Heat a crêpe pan (preferably cast iron).
If your crepe batter has become too thick, add a little milk to it. Mix well.
Melt a knob of butter in your frying pan. Pour in a ladleful of batter.
When the edges of the crepe start to lift, flip it over using a spatula. Let it cook for another 30 seconds to 1 minute, then remove it from the pan.
Repeat until all the dough is used up.
Add butter before cooking each crepe if you want them to be extra fluffy.
