le fondateur de Kaoka - arrive en \u00c9quateur. C'\u00e9tait Gilles Roche, alors co-directeur du projet pour la relance de la production et l'am\u00e9lioration de la qualit\u00e9 du cacao \u00e9quatorien, qui l'avait contact\u00e9 et l'avait invit\u00e9 \u00e0 se rendre dans le pays aux cabosses d'or, l'\u00c9quateur. Gilles Roche connaissait la d\u00e9marche et la philosophie d'Andr\u00e9 Deberdt et sa passion pour le cacao aromatique. <strong>Il n'en fallait pas plus pour \u00e9veiller la curiosit\u00e9 d'Andr\u00e9 Deberdt.<\/strong>\r\n\r\nC'est Wilson Montoya - aujourd'hui responsable technique \u00e0 la CECAB coop\u00e9rative partenaire de Kaoka - qui l'a accueilli sur le sol \u00e9quatorien. Wilson Montoya parlait espagnol et peu d'anglais et Andr\u00e9 Deberdt parlait fran\u00e7ais et anglais : les premiers \u00e9changes se sont faits avec beaucoup de signes et peu de mots. Mais quelle importance ? <strong>Le cacao Nacional parla pour eux. Les ar\u00f4mes de cette vari\u00e9t\u00e9 exceptionnelle ont imm\u00e9diatement conquis Andr\u00e9. Il voulait ce cacao pour les chocolats Kaoka\u00ae.<\/strong>\r\n\r\n&nbsp;\r\n\r\n<hr \/>\r\n\r\n<h2>Le Cacao Nacional, un tr\u00e9sor de lumi\u00e8re et d'ar\u00f4mes<\/h2>\r\n<img class=\"alignnone size-full wp-image-13810\" src=\"https:\/\/www.kaoka.fr\/wp-content\/uploads\/2024\/01\/cabosses-de-cacao-nacional-couleur-jaune-equateur.jpg\" alt=\"\" width=\"960\" height=\"427\" \/>\r\n\r\nC'est en \u00c9quateur uniquement que pousse le <strong>Cacao Nacional<\/strong>, une vari\u00e9t\u00e9 end\u00e9mique issu du Forastero et d\u00e9sormais, v\u00e9ritable patrimoine de l'\u00c9quateur. Il est aujourd'hui reconnu comme un \u00e9l\u00e9ment important de l'identit\u00e9 culturelle et \u00e9conomique du pays.\r\n\r\n<img class=\"alignnone size-full wp-image-13883\" src=\"https:\/\/www.kaoka.fr\/wp-content\/uploads\/2024\/01\/Carte-identite-cacao-nacional-2.jpg\" alt=\"Profil Aromatique du Cacao Nacional\" width=\"1080\" height=\"480\" \/>\r\n\r\n&nbsp;\r\n\r\nTraditionnellement appel\u00e9 la <strong>Pepa de Oro <em>(la p\u00e9pite d'or)<\/em><\/strong>, ce cacao de grand cru offre des ar\u00f4mes subtils d'agrumes et de fruits secs. Il se distingue des autres cacaos par ses notes florales caract\u00e9ristiques, comme le jasmin ou la rose. Son profil aromatique rare et pr\u00e9cieux est mondialement reconnu par les amateurs de chocolat.\r\n<h2>Pourquoi le cacao Nacional \u00e9tait-il menac\u00e9 ?<\/h2>\r\nLe cacao Nacional \u00e9tait menac\u00e9 pour plusieurs raisons, notamment les <strong>maladies<\/strong>, le <strong>vieillissement des plantations<\/strong>\u00a0et la concurrence avec des vari\u00e9t\u00e9s de cacao hybrides plus r\u00e9sistantes et productives.\r\n\r\nAu d\u00e9but du 20\u00e8me si\u00e8cle, l\u2019arriv\u00e9e massive de maladies telle que la monilose et le balai de sorci\u00e8re ont profond\u00e9ment affect\u00e9 la production de cacao Nacional. La plupart des grandes exploitations de cacao sont alors reconverties en bananeraies. <strong>La production de cacao Nacional en \u00c9quateur baisse significativement<\/strong>.\r\n\r\nEn parall\u00e8le, au d\u00e9but des ann\u00e9es 90, afin de r\u00e9pondre \u00e0 un besoin de culture intensive, le CCN-51 (vari\u00e9t\u00e9 de cacao hybride de qualit\u00e9 organoleptique de moindre qualit\u00e9) est massivement plant\u00e9. Il a \u00e9t\u00e9 m\u00e9lang\u00e9 au Cacao Nacional et la qualit\u00e9 aromatique du cacao \u00e9quatorien s'est d\u00e9grad\u00e9e progressivement.\r\n\r\n[caption id=\"attachment_13854\" align=\"alignnone\" width=\"768\"]<img class=\"wp-image-13854 size-full\" src=\"https:\/\/www.kaoka.fr\/wp-content\/uploads\/2024\/01\/un-cacaoyer-cabosses-cacao-nacional-equateur.jpg\" alt=\"Un cacaoyer et des cabosses de cacao nacional en \u00c9quateur\" width=\"768\" height=\"342\" \/> Des cabosses de cacao Nacional qui poussent directement sur le tronc d'un cacaoyer en \u00c9quateur.[\/caption]\r\n<h3>Qu'est-ce que le CCN-51 ?<\/h3>\r\n<img class=\"alignnone size-full wp-image-13885\" src=\"https:\/\/www.kaoka.fr\/wp-content\/uploads\/2024\/01\/Carte-identite-CCN-51.jpg\" alt=\"Carte identit\u00e9 du CCN-51\" width=\"1080\" height=\"480\" \/>\r\n\r\nLe CCN-51 est <strong>une vari\u00e9t\u00e9 hybride de cacao<\/strong> r\u00e9sultant du croisement de plusieurs vari\u00e9t\u00e9s de cacao. Cette vari\u00e9t\u00e9 a \u00e9t\u00e9 mise au point par l'agronome \u00e9quatorien Homero Castro. Elle a \u00e9t\u00e9 introduite en \u00c9quateur pour r\u00e9pondre \u00e0 la pression croissante d'augmentation de production de cacao.\r\n\r\nLe CCN-51 est souvent choisi pour sa <strong>productivit\u00e9<\/strong> sup\u00e9rieure par rapport aux vari\u00e9t\u00e9s traditionnelles comme le cacao Nacional. Il pousse rapidement, r\u00e9siste mieux \u00e0 certaines maladies du cacao et offre des rendements plus importants, ce qui en fait un choix attractif pour les agriculteurs cherchant \u00e0 optimiser leur production. Mais cette vari\u00e9t\u00e9 hybride est aussi vivement critiqu\u00e9e, car elle serait <strong>plus gourmande en eau et en engrais<\/strong> que les vari\u00e9t\u00e9s traditionnelles. On bl\u00e2me aussi ses pi\u00e8tres qualit\u00e9s organoleptiques avec une amertume et une acidit\u00e9 tr\u00e8s marqu\u00e9es.\r\n\r\nLe large d\u00e9veloppement de la culture du CCN-51 entra\u00eene une standardisation des go\u00fbts des chocolats. Cette vari\u00e9t\u00e9 hybride au profil gustatif moins complexe se retrouve dans de nombreux chocolats et entra\u00eene une perte de la diversit\u00e9 aromatique des chocolats. Les tablettes de chocolat disponible sur le march\u00e9 tendent \u00e0 avoir <strong>toujours le m\u00eame go\u00fbt. <\/strong>Le risque ? Que les consommateurs s'habituent \u00e0 cette norme du chocolat de basse qualit\u00e9 (acide et amer sans profondeur aromatique). Triste, non ?\r\n\r\n<strong>C'est pour cette raison que Kaoka est si attach\u00e9 \u00e0 la pr\u00e9servation des vari\u00e9t\u00e9s de cacao aromatique : nous devons pr\u00e9server la diversification des go\u00fbts traditionnels des cacaos et conserver leur richesse aromatique. Mais il voulait acheter le cacao directement aupr\u00e8s des producteurs et il voulait un cacao de la meilleure qualit\u00e9 pour les chocolats Kaoka\u00ae. Il y rencontra une coop\u00e9rative de producteurs qui cultivaient le fameux cacao aromatique Nacional. Cependant, ces derniers \u00e9taient alors confront\u00e9s \u00e0 des r\u00e9coltes qui s'affaiblissaient d'ann\u00e9e en ann\u00e9e. Cette baisse des r\u00e9coltes ne permettait plus aux producteurs de b\u00e9n\u00e9ficier de revenus satisfaisants.\r\n\r\nEn effet, leurs plantations \u00e9taient vieillissantes et devaient improductives, mettant en p\u00e9ril les revenus de ces familles de producteurs.\r\n\r\nSoutenu par l\u2019Union Europ\u00e9enne, un projet ambitieux de sauvegarde du cacao Nacional \u00e9tait d\u00e9j\u00e0 lanc\u00e9 en \u00c9quateur et c'est \u00e0 la suite de ce projet que la <a href=\"https:\/\/www.kaoka.fr\/les-filieres\/equateur\/\">fili\u00e8re \u00e9quatorienne de Kaoka<\/a> s\u2019est construite.\r\n\r\nhttps:\/\/www.youtube.com\/watch?v=yDj0kg6eAAE\r\n\r\n<em>T\u00e9moignage d'Andr\u00e9 Deberdt, fondateur de Kaoka : \u00ab Si on ne s'attaque pas rapidement \u00e0 r\u00e9habiliter et \u00e0 redensifier, et bien dans 10 ans il n'y a plus de cacao Nacional d'\u00c9quateur\u00bb.<\/em>\r\n\r\n&nbsp;\r\n<h3>S\u00e9lectionner les meilleurs arbres de cacao Nacional<\/h3>\r\nAndr\u00e9 Deberdt est parti \u00e0 la rencontre des producteurs pour identifier avec eux les arbres avec du \"sang Nacional\" les plus r\u00e9sistants, les plus productifs et les plus aromatiques. L'enjeu est double : sauvegarder le cacao Nacional et am\u00e9liorer les revenus des producteurs. En effet, Pour Kaoka, la culture du cacao Nacional ne pouvait perdurer que si elle \u00e9tait r\u00e9mun\u00e9ratrice pour les producteurs. Dans ce projet, il \u00e9tait indispensable que chacun soit gagnant.\r\n\r\nCe travail de recherche agronomique a dur\u00e9 pendant 5 ans. Au d\u00e9but, les producteurs volontaires sont peu nombreux. En effet, la taille de l'arbre est drastique et entra\u00eene momentan\u00e9ment une perte de production. Cons\u00e9quence : la fermentation des f\u00e8ves de cacao \u00e9tait al\u00e9atoire et la qualit\u00e9 tr\u00e8s variable. Rapidement, Andr\u00e9 Deberdt a r\u00e9alis\u00e9 que c'\u00e9tait un frein \u00e9vident \u00e0 l'am\u00e9lioration de la qualit\u00e9.\r\n\r\n<strong>La fermentation du cacao \u00e9tait une \u00e9tape trop importante : tout devait \u00eatre centralis\u00e9.<\/strong> Des infrastructures furent construites \u00e0 la coop\u00e9rative et dans les associations les plus \u00e9loign\u00e9es. D\u00e9sormais, le cacao \u00e9tait achet\u00e9 en frais aux producteurs. Un avantage pour les producteurs car ces derniers \u00e9taient soulag\u00e9s de ces \u00e9tapes de transformation et surtout, pay\u00e9s d\u00e8s la r\u00e9colte du cacao. Il n'\u00e9tait plus n\u00e9cessaire d'attendre 3 ou 4 semaines.\r\n\r\nEn centralisant ces \u00e9tapes, Kaoka a pu \u00e9laborer un protocole de fermentation et de s\u00e9chage adapt\u00e9 aux f\u00e8ves de cacao Nacional. The regulation is based on the FAO definition (\"<em>Global Forest Resources Assessment. For parcels larger than 4 ha, the geographical location must be provided using polygons describing the perimeter of each parcel.\r\n\r\nA system for classifying countries according to the risks associated with deforestation will be published over the next 18 months. Face \u00e0 la forte industrialisation de l'alimentation et \u00e0 la prise de conscience des limites plan\u00e9taires, elle conna\u00eet un essor \u00e0 l'approche des ann\u00e9es 70.\r\n\r\nL'agriculture biologique est un mode de production qui assure le respect de l'environnement, la protection du climat, de la biodiversit\u00e9 et de la sant\u00e9 humaine. Elle est encadr\u00e9e par une r\u00e9glementation europ\u00e9enne depuis 1991. <strong>Elle privil\u00e9gie une approche pro active en amont \u00e0 travers le d\u00e9veloppement de la diversit\u00e9 et l'am\u00e9lioration de la qualit\u00e9 du sol, de l'eau, des v\u00e9g\u00e9taux et des animaux plut\u00f4t que le traitement de probl\u00e8mes lors de leur apparition.<\/strong>\r\n\r\n<img class=\"alignnone size-full wp-image-12602\" src=\"https:\/\/www.kaoka.fr\/wp-content\/uploads\/2023\/03\/agriculture-biologique.jpg\" alt=\"agriculture-biologique\" width=\"860\" height=\"190\" \/>\r\n\r\nLe cahier des charges de l'agriculture biologique inclut plusieurs exigences :\r\n<ul>\r\n \t<li>Aucune utilisation de produits chimiques de synth\u00e8se (pesticides, engrais, d\u00e9sherbants, etc.) \u274c\ud83e\uddea<\/li>\r\n \t<li>Aucune utilisation d\u2019OGM \u274c\ud83e\uddec<\/li>\r\n \t<li>Le respect du bien-\u00eatre animal \u2714\ufe0f\ud83d\udc04<\/li>\r\n<\/ul>\r\nPlusieurs types de produits peuvent \u00eatre certifi\u00e9s bio :\r\n<ul>\r\n \t<li>Les produits agricoles bruts (fruits, l\u00e9gumes, c\u00e9r\u00e9ales, etc.),\ud83c\udf53\ud83c\udf47\ud83e\udd66<\/li>\r\n \t<li>Les produits transform\u00e9s pour l'alimentation humaine qui en d\u00e9coulent, \ud83c\udf6b\ud83c\udf6a<\/li>\r\n \t<li>Les produits agricoles destin\u00e9s aux animaux, \ud83c\udf3e<\/li>\r\n \t<li>Les semences.\ud83c\udf3f<\/li>\r\n<\/ul>\r\nPour pouvoir afficher la certification AB et\/ou le label bio europ\u00e9en, un produit doit \u00eatre produit et transform\u00e9 en respectant ce cahier des charges. <strong>Dans le cas d'un produit transform\u00e9, il doit \u00eatre compos\u00e9 d'au minimum 95% de produits issus de l'agriculture biologique<\/strong>.\r\n\r\nEnfin, pour \u00eatre commercialis\u00e9 en tant que produit bio, toute entit\u00e9 doit \u00eatre contr\u00f4l\u00e9e par un organisme certificateur agr\u00e9\u00e9 par les pouvoirs publics. En France, il existe plusieurs organismes certificateurs habilit\u00e9s \u00e0 d\u00e9livrer des certificats Bio. Ces organismes certificateurs effectuent un audit de contr\u00f4le minimum 2 fois par an. Toutes les \u00e9tapes sont v\u00e9rifi\u00e9es : depuis la culture, aux achats de mati\u00e8res premi\u00e8res, aux r\u00e8gles de stockages et \u00e0 la production des produits.\r\n<h3><strong>\u00c0 retenir : <\/strong><\/h3>\r\nLa principale diff\u00e9rence entre l'agriculture biologique et l'agriculture conventionnelle (non bio) est l'origine des produits utilis\u00e9s pour la culture. <strong>Pour lutter contre les al\u00e9as et\/ou am\u00e9liorer les r\u00e9coltes, les agriculteurs certifi\u00e9s biologiques peuvent \u00eatre amen\u00e9s \u00e0 utiliser des produits d'origine naturelle. <\/strong>Alors qu'en agriculture conventionnelle, les intrants de synth\u00e8se (pesticides\/engrais chimiques), fabriqu\u00e9s en laboratoire, sont autoris\u00e9s.\r\n<h3 id=\"certification\">Comment savoir si un produit est certifi\u00e9 Bio ?<\/h3>\r\n[caption id=\"attachment_12572\" align=\"alignnone\" width=\"860\"]<img class=\"wp-image-12572 size-full\" src=\"https:\/\/www.kaoka.fr\/wp-content\/uploads\/2023\/03\/logos-bio.jpg\" alt=\"Logos Agriculture Biologique\" width=\"860\" height=\"190\" \/> Les logos \u00ab AB \u00bb et \u00ab Bio Europe \u00bb[\/caption]\r\n<ul>\r\n \t<li>Si le logo AB (fran\u00e7ais) et\/ou le logo europ\u00e9en Eurofeuille sont pr\u00e9sent sur l'emballage, cela signifie que le produit est certifi\u00e9 Bio. Il est compos\u00e9 de plusieurs familles dont :\r\n<ul>\r\n \t<li>les herbicides pour tuer les mauvaises herbes,<\/li>\r\n \t<li>les insecticides pour \u00e9liminer les insectes,<\/li>\r\n \t<li>les fongicides pour \u00e9liminer les champignons,<\/li>\r\n \t<li>les parasiticides pour \u00e9liminer les vers,<\/li>\r\n \t<li>les acaricides pour \u00e9liminer les acariens,<\/li>\r\n \t<li>les bact\u00e9ricides pour \u00e9liminer les bact\u00e9ries.<\/li>\r\n<\/ul>\r\nLa liste est encore longue et effrayante. Si le but des pesticides chimiques est d'affecter tous les organismes vivants et de transformer les environnements dans lesquels ils \u00e9voluent (et nous aussi), nous sommes en mesure de nous demander pourquoi et comment ils ont pu \u00eatre la norme du mod\u00e8le agricole industriel ?\r\n\r\nCes traitements chimiques sont cens\u00e9s \"prot\u00e9ger\" les cultures des insectes parasites et des al\u00e9as naturels. Utilis\u00e9s en tr\u00e8s grande quantit\u00e9, <strong>ils ont permis plus de rendements \u00e0 court terme<\/strong>.\r\n\r\nMais cette culture intensive a appauvri les terres, de moins en moins fertiles, entra\u00eenant un d\u00e9s\u00e9quilibre de l'\u00e9cosyst\u00e8me global. Vous le voyez le cercle vicieux ? Il faut alors avoir recours aux engrais et pesticides en masse pour revenir \u00e0 des rendements corrects, aggravant sur le long terme la situation jusqu'\u00e0 un point de non-retour.\r\n\r\n<img class=\"alignnone size-medium wp-image-12758\" src=\"https:\/\/www.kaoka.fr\/wp-content\/uploads\/2023\/04\/impact-pesticides-biodiversite-eau-sol-1200x743.jpg\" alt=\"Sch\u00e9ma de l'impact des pesticides sur la biodiversit\u00e9, les sols, et l'eau par les effets de volatilisation, \u00e9vaporation, pr\u00e9cipitations, ruissellements\" width=\"1200\" height=\"743\" \/>\r\n\r\nEtant volatiles, les pesticides se propagent dans notre environnement \u00e0 travers de nombreuses voies : par infiltration, par volatisation ou encore par ruiss\u00e8lement. Ils se retrouvent \u00e0 contaminer les sols, l'air, les cours d'eau et donc tous les organismes vivants dans ces milieux. On peut donc en retrouver dans notre organisme, \u00e0 travers notre nourriture, notre eau, nos v\u00eatements ou l'air que l'on respire.\r\n\r\n&nbsp;\r\n\r\n<hr \/>\r\n\r\n<h2 id=\"manger-bio\">Pourquoi c'est important de manger Bio ?<\/h2>\r\n<ul>\r\n \t<li><strong>\u00a0Pour prot\u00e9ger l'environnement et la biodiversit\u00e9<\/strong><\/li>\r\n<\/ul>\r\nLes pesticides ont de lourds impacts sur l'environnement. Etant utilis\u00e9s pour annihiler et faire dispara\u00eetre des organismes consid\u00e9r\u00e9s comme nuisibles, ils empoisonnant certains maillons de la cha\u00eene alimentaire. D'autres esp\u00e8ces voient alors leurs ressources alimentaires dispara\u00eetre et doivent lutter \u00e0 leur tour pour maintenir leur \u00e9quilibre. <strong>N'ayant pas recours \u00e0 ces produits nocifs, l'agriculture biologique ne cause pas d'effets n\u00e9gatifs sur la biodiversit\u00e9 et prot\u00e8ge autant que possible les \u00e9cosyst\u00e8mes.<\/strong>\r\n\r\n<img class=\"alignnone size-full wp-image-12763\" src=\"https:\/\/www.kaoka.fr\/wp-content\/uploads\/2023\/05\/pourquoi-manger-bio.jpg\" alt=\"Pourquoi est-il important de manger bio ?\" width=\"1080\" height=\"669\" \/>\r\n\r\n<strong>Choisir de manger bio, c'est : pr\u00e9server les \u00e9cosyst\u00e8me, favoriser la fertilit\u00e9 des sols, \u00e9viter l'\u00e9rosion et prot\u00e9ger les milieux aquatiques et nos r\u00e9serves d'eau<\/strong>.\r\n\r\nOn retrouve en moyenne 30 % d\u2019esp\u00e8ces diff\u00e9rentes en plus et une abondance d\u2019individus qui augmente de 50 % dans les parcelles en agriculture biologique (1). Les parcelles bio ont une meilleure couverture biologique et une biodiversit\u00e9 plus riche qui permet des sols plus stables et fertiles. Ils r\u00e9sistent ainsi mieux aux al\u00e9as climatiques \u00e0 l'origine de l'\u00e9rosion.\r\n\r\n&nbsp;\r\n<ul>\r\n \t<li><strong>Pour prot\u00e9ger notre souverainet\u00e9 alimentaire<\/strong><\/li>\r\n<\/ul>\r\nLa souverainet\u00e9 alimentaire est d\u00e9finie comme le droit des peuples \u00e0 une alimentation saine et culturellement appropri\u00e9e produit avec des m\u00e9thodes durables et \u00e0 la d\u00e9finition de leurs propres syst\u00e8mes agricoles et alimentaires. Travailler en harmonie avec la nature est un des 7 piliers de la souverainet\u00e9 alimentaire. Pour cause, nous sommes d\u00e9pendants des services \u00e9cosyst\u00e9miques rendus par la Nature.\r\n\r\nDans l'infographie ci-dessous, vous pouvez observer toute l'importance des animaux pollinisateurs dans la production de notre nourriture. Leur absence repr\u00e9sente des pertes de r\u00e9coltes tr\u00e8s cons\u00e9quentes selon les cultures. Pour ainsi dire, pas de pollinisation, pas de chocolat (entre bien d'autres choses \u00e9videmment).\r\n\r\n<img class=\"alignnone wp-image-12753 size-thumbnail\" src=\"https:\/\/www.kaoka.fr\/wp-content\/uploads\/2023\/05\/Importance-auxiliaires-pollinisation-agriculture-souverainete-alimentaire-300x359.jpg\" alt=\"\" width=\"300\" height=\"359\" \/>\r\n\r\n&nbsp;\r\n<ul>\r\n \t<li><strong>C'est meilleur pour notre sant\u00e9 et celle des producteur\u00b7rice\u00b7s :<\/strong><\/li>\r\n<\/ul>\r\nChoisir de manger bio, c'est la garantie de consommer des aliments qui n'ont pas \u00e9t\u00e9 directement trait\u00e9s par des pesticides et autres intrants chimiques nocifs pour la sant\u00e9. Plusieurs \u00e9tudes ont d\u00e9montr\u00e9 que l'exposition aux pesticides favorise le d\u00e9veloppement de pathologies graves et mortelles (cancers, maladies neurod\u00e9g\u00e9n\u00e9ratives et des malformations chez les enfants \u00e0 na\u00eetre).\r\n\r\nChoisir de consommer bio, c'est aussi limiter l'utilisation de ces produits controvers\u00e9s qui polluent l'environnement dans lequel nous vivons. Plus grand sera le nombre de champs ou de vergers biologiques, moins il y aura de pollution dans nos sols, nos nappes et nos rivi\u00e8res.\r\n\r\n<strong>Sources :<\/strong>\r\n(1) Bengtsson et al. (2005), The effects of organic agriculture on biodiversity and abundance: a meta-analysis\r\n\r\n&nbsp;\r\n\r\n<hr \/>\r\n\r\n<h2 id=\"difference-bio-sans-residus-pesticides\">Quelle est la diff\u00e9rence entre l'agriculture bio et les autres labels durables comme les all\u00e9gations \u00ab sans r\u00e9sidus de pesticides \u00bb ?<\/h2>\r\nFace au label Bio, de nouvelles all\u00e9gations sont apparues comme le sans pesticides, \u00abCultiv\u00e9s Sans Pesticides \u00bb, \u00abZ\u00e9ro R\u00e9sidu de Pesticides\u00bb ou encore le label \u00abHVE - Haute Valeur Environnemental\u00bb.\r\n\r\nOn le rappelle, <strong>en agriculture biologique, l'usage de tous types de produits chimiques de synth\u00e8se est proscrite.<\/strong>\r\n\r\nLa promesse des labels \u00absans r\u00e9sidus de pesticides\u00bb : proposer aux consommateurs des produits sans traces de pesticides. L'intention semble louable. Cependant, ces labels ne sont pas aussi exigeants sur les conditions de culture que l'agriculture biologique, puisqu'ils autorisent l'\u00e9pandage de pesticides. Pour atteindre des r\u00e9sultats \"conformes\", les pesticides ne laissant peu ou pas de traces sur le produit consomm\u00e9 vont \u00eatre privil\u00e9gi\u00e9s et\/ou appliqu\u00e9s aux premi\u00e8res \u00e9tapes de culture.\r\n\r\nAussi, contrairement au bio qui engage une culture sur plusieurs ann\u00e9es, ces certifications \"sans pesticides\" ne concernent qu'une parcelle \u00e0 un \"instant t\" et auront un impact n\u00e9gatif sur l'environnement tout comme une culture conventionnelle.\r\n\r\n<img class=\"alignnone size-medium wp-image-12786\" src=\"https:\/\/www.kaoka.fr\/wp-content\/uploads\/2023\/04\/sans-residus-pesticides-et-bio-label-bio-vs-labels-durable-et-non-bio-1-1200x707.jpg\" alt=\"\" width=\"1200\" height=\"707\" \/>\r\n\r\nPour prot\u00e9ger l'environnement dans lequel nous vivons, il est essentiel de limiter au maximum l'utilisation de ses intrants chimiques, responsables de pollution. <strong>Aujourd'hui, seuls les labels bio ont le m\u00e9rite d'aller plus loin dans cette d\u00e9marche.<\/strong>\r\n\r\n&nbsp;\r\n<h3>\"Oui mais en agriculture biologique, certains pesticides sont aussi autoris\u00e9s\"<\/h3>\r\nC'est un argument que l'on entend souvent. Or, <strong>les pesticides chimiques sont absolument interdits en agriculture biologique<\/strong> (contrairement en agriculture non bio ou dite conventionnelle). En agriculture biologique, les producteurs ont recours \u00e0 des traitements d'origine naturelle pour prot\u00e9ger leurs cultures : <strong>la r\u00e9glementation europ\u00e9enne autorise 57 substances naturelles en production bio.<\/strong> Il faut savoir que <strong>plus de 450 substances sont autoris\u00e9es en agriculture non bio ou dite conventionnelle<\/strong> ! Et ces derni\u00e8res sont essentiellement chimiques.\r\n\r\nEt m\u00eame si ces traitement sont naturels, les principes de l'agriculture biologique recommandent de les utiliser avec pr\u00e9caution.\r\n\r\nIl est aussi important de noter que les herbicides sont \u00e9galement interdits en bio. L'agriculture non bio ou conventionnelle n'\u00e9met pas de restriction \u00e0 ce sujet.\r\n\r\nDans son ensemble, l\u00e0 o\u00f9 l'agriculture non bio ne s'embarrasse d'aucun engagement, l'agriculture biologique d\u00e9fend et pr\u00f4ne des pratiques plus respectueuses pour l'environnement dans lequel nous vivons et, pour notre sant\u00e9.\r\n\r\n&nbsp;\r\n<h3 id=\"bio-ou-local\">Consommer Bio ou local ?<\/h3>\r\n&nbsp;\r\n\r\nOn entend souvent cette question qui met en opposition deux d\u00e9marches qui ne devraient pas l'\u00eatre. Il est vrai que l'importation de fruits et l\u00e9gumes de l'autre bout du monde a un impact important sur l'environnement. C'est pourquoi en plus du bio et de la saisonnalit\u00e9, <strong>il est important de manger local<\/strong>. Manger bio et local, c'est consommer des aliments produits \u00e0 quelques kilom\u00e8tres de chez soi (de 0 \u00e0 250 kms) et dans des conditions respectueuses des r\u00e9gions dans lesquelles nous vivons. Les cacaoyers sont des arbres tropicaux qui n\u00e9cessitent des sols profonds et fertiles. Selon les vari\u00e9t\u00e9s, ils sont plus ou moins sensibles aux maladies. <strong>Si un cacaoyer est cultiv\u00e9 sur une terre d\u00e9forest\u00e9e en monoculture, une grande quantit\u00e9 d'intrants chimiques sera n\u00e9cessaire pour obtenir une productivit\u00e9 de cacao suffisante.<\/strong>\r\n\r\nDans les ann\u00e9es 90, les premi\u00e8res tablettes de chocolats certifi\u00e9es biologiques sont arriv\u00e9es dans les rayons des magasins sp\u00e9cialis\u00e9s. La tablette Kaoka\u00a0<a href=\"https:\/\/www.kaoka.fr\/grand-public\/noir-70-cacao\/\" target=\"_blank\" rel=\"noopener\"> Noir 70%<\/a> faisait partie de ces tablettes pr\u00e9curseuses.\r\n\r\nLa R\u00e9publique Dominicaine s\u2019est historiquement impos\u00e9e en tant que producteur de cacao bio majeur. <strong>Jusqu\u2019en 2013 la R\u00e9publique Dominicaine et le P\u00e9rou repr\u00e9sentaient plus de 65% de la production mondiale de cacao bio.<\/strong>\r\n\r\nMais face au boom de la consommation bio, les n\u00e9gociants, \u00e0 la recherche d\u2019un cacao bio \u00e0 moindre co\u00fbt, ont commenc\u00e9 \u00e0 s\u2019int\u00e9resser \u00e0 l\u2019Afrique. En l\u2019espace de quelques ann\u00e9es, les surfaces de cacaoyers bio se sont alors fortement d\u00e9velopp\u00e9es en Afrique.
